Fish is consumed as food all over the world, and with other seafoods, provides the world's prime source of high-quality protein. Most fresh fish and even some shellfish are extremely delicate tasting. Yet this does not preclude using pungent seasonings when preparing them.

As with any fish or seafood dish, it is essential that the fish be very fresh. If the market does not offer suitable Cape Cod Bay scallops, quartered sea scallops can be substituted. Even shrimp can be used. Similarly, almost any white-fleshed fillets can replace the flounder and striper (sea bass) called for in other recipes.
